Chocolate Chip Cookie Recipe

You know those days when you're really craving a soft and chewy subway cookie BUT you're too lazy to get off your butt and go and get one or you know that you're going to feel guilty eating it because it has so much sugar and butter in it? Well inspired by Joy Of Baking's Chocolate Chip Cookie Recipe . I've modified this recipe to contain less sugar and butter but has the same great crispiness and chewiness that everyone loves.


THINGS YOU WILL NEED 
  • 2 x Large Bowl 
  • Measuring Spoons 
  • Kitchen Scales (if you'd like it in any other measuring system, I'd recommend this : http://allrecipes.com/howto/cup-to-gram-conversions/)
  • Electric Beater/mixer/standmixer
  • Cookie Tray 
  • Sieve 
  • Knife 
  • Small Bowl 
  • Cooling Rack 
INGREDIENTS 
  • 170g Butter (Room Temp) - Cubed
  • 25g White/Caster Sugar
  • 150g Compact Brown Sugar (Do not Sift this)
  • 1 Whole Egg (Room Temp) 
  • 1 Egg Yolk (Room Temp) 
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda 
  • 295g Flour 
  • Pinch of Salt 
  • Chocolate Chips - As much as you'd like, I usually use a whole packet
Notes :  
Make sure butter is at room temperature or microwave until soft - NOT MELTED, this way the butter creams evenly. 
It is not necessary but it is better in the eggs are also room temperature
BEAT EGGS ONE AT A TIME 
Sift the baking soda, if there are lumps it'll make the cookies bitter

METHOD 
1. Preheat the oven to 190 degrees Celsius (tray in the middle of the oven) and Line 2 baking sheets
2. In a bowl sift together the dry ingredients : Flour, Baking Soda and Egg and set aside
3. Put the cubed butter, white/caster sugar, vanilla extract and brown sugar into a bowl/stand mixer and beat on medium speed until fully combined and fluffy 
4. Once combined add in the whole egg and beat until it is fully combined 
5. Once combined beat in the egg yolk until full combined 
6. Add in dry ingredients and beat until all combined then pour all chocolate chips in

7. Portion cookies around 25g will give you a nice sized cookie 
8. Bake for around 10-12 minutes or until golden brown around the edges 
9. Let it cool on the baking tray for about 5 minutes then transfer to a cooling rack 


OTHER DELICIOUS COOKIE COMBOS 
  • White Chocolate and Macadamia Nuts 
  • Triple Chocolate Chip - White Chocolate, Dark Chocolate and Milk Chocolate 
  • Take out 64g or 1/2 cup of Flour and replace it with 64g or 1/2cup of Cocoa Powder and make Double Chocolate Chip Cookies
